Because it is based on the last supper...
Broke bread and drank wine. Symbolizing Jesus' body being broken and the blood that would be shed for our sins.
Crackers do not have leaven in them. Leaven is symbolic of man's input. Grape juice instead of wine to prevent alcoholics from lapsing back into old ways.

They are recreating the part of the Last Supper where Jesus broke broke bread and bless it and pour wine.
They don't recreating the whole Passover meal. Which the Last Supper was part of.

Well it would propably be too expensive to feed the whole congregation lamb .... crackers are cheaper. There are billions of christians there would be no lamb left for the other people, so it is propably a financial and practical decision.

When a Catholic priests speaks Christs words over the bread and wine, the bread and wine become the Body, Blood , Soul and Divinity of Christ, but the "accidents" (appearance) of bread and wine remain. The waffer is flesh looking.... good question, i dunno.
I woudlnt eat lamb though so im happy.
