What is your sugesstion? Also I want to make spinach caserol but i don;t know how..anyone help please!!!Thanks a lot!

Excellent ranch dressing is made by combining buttermilk and mayo (50-50 quantities) with those ranch dressing packets. Buttermilk makes excellent baked goods of all kinds: Think cornbread, biscuits, soda breads, pancakes. There's a custard-type pie made with buttermilk, called "buttermilk pie." Buttermilk cannot successfully be subjected all alone to high heat or acids, as it will separate.

Even opened, buttermilk will keep at the back of your refrigerator about 3 weeks past the expiry date printed on the carton.

There are so many variations of spinach casserole, I'm not certain what you want. Here's how I think I'd make it (and specific amounts aren't essential):

2 or 3 Ten-oz boxes of frozen chopped spinach, thawed and squeezed in your hands (hard!) to remove extra moisture
A pound (16 oz or so) of ricotta cheese
2 eggs
butter/marg, milk, flour
Onion, garlic, white sauce, salt, pepper, nutmeg/mace (read on)
More cheese?

Make a white sauce by frying a half a chopped onion in about 3 tbsp of butter or margarine until it gets kinda clear looking, then stir in 1/4 cup (4 tablespoons) of flour until it's mostly smooth, then whisk in 2 cups milk (keep whisking a minute--no lumps). Let it come to a bubble, then let it simmer for 5 mins. Turn off heat and set aside. Add some garlic powder or garlic salt, or a clove of fresh garlic, pressed or chopped to this sauce, and a couple pinches of nutmeg or mace (about 1/4 tsp), and a good amount of black pepper (1/4 tsp) and a half-teaspoon of salt.

Beat the eggs into the ricotta. Stir the white sauce into this mixture. If you want more cheese, such as grated cheddar or parmesan or Gruyere, add it now, about a half cup to a cup, as you wish. Now stir in your spinach.

Pour this into a greased 9 x 9 baking dish. Bake at 350 for about 30 mins, until it puffs slightly, and a knife inserted 2/3 way towards the center is clean (but the center can still be a bit wet and jiggly). Remove from oven and cool on a rack.

you can make pancakes with the buttermilk, you can make cornbread with buttermilk (which gives it a distinctive taste than other cornbread)

Here is how I make my cornbread: Depending on the size of the cornbread I want to make, I pour white corn meal into my bowl. I add probably a teaspoon of veggie oil (I use canola) and then pour some buttermilk in there, like 1/2 c. to 3/4 depending on how much meal you are using, just enough to get the meal wet but still dry. I then add enough water to make the mixture smooth. I spray my baking dish with cooking spray and pour in the mixture. I bake it for about 45 min on 400.

You can use buttermilk if you want to make some homemade biscuits.

There are some cakes that ask for buttermilk in the recipe. You could do a search for buttermilk cake recipes or recipes calling for buttermilk.

Spinach Casserole:
1 1/2 cups egg substitute (or 6 eggs, lightly beaten)
1 (16 ounce) container lowfat large curd cottage cheese
1 (16 ounce) container fat-free cottage cheese
8 ounces shredded low-fat cheddar cheese
6 tablespoons all-purpose flour
2 (20 ounce) packages frozen chopped spinach, thawed and drained well


Preheat oven to 350 degrees.
Combine all ingredients together in large bowl.
Spray large casserole dish or oblong baking pan with non-stick cooking spray.
Pour ingredients in pan and bake at 350 degrees for 1 hour or until knife inserted in middle comes out clean.


here is another I found:

2 (10 ounce) boxes frozen chopped spinach, defrosted
1 large egg
1 teaspoon salt
1/4 teaspoon black pepper
1 small onion, chopped fine
1 1/2 cups sharp cheddar cheese, shredded
1 can condensed cream of mushroom soup
1-2 cup croutons

Preheat oven to 350 degrees.
Place spinach in strainer and squeeze all extra liquid from it.
In a large bowl, combine spinach with the rest of ingredients, except croutons, and combine well.
Pour into a 2 quart casserole dish and top with croutons.
Bake for 35 to 40 minutes, or until bubbling around edges.

Use the buttermilk: add cubed potatoes, chopped onions, chopped clams, and black pepper and make some New England Clam Chowdah!!!

Spinach caserol: I'm queezy just at the thought.

Spinach casserole

2 packages frozen spinach, (10 oz each)
6 ounces cream cheese, softened
1/2 cup butter, melted, divided
1 cup seasoned bread crumbs
paprika, optional

Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter. Spoon into casserole dish.

Sprinkle with the breadcrumbs and paprika, and drizzle with remaining 1/4 cup of butter. Bake at 350 degrees for 25 minutes.

Use that buttermilk to make fried chicken.....

BUTTERMILK FRIED CHICKEN

3/4 c. flour
Scant 1/2 c. cornmeal
1 1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. red cayenne pepper (ground)
1 c. buttermilk or 1 tbsp. vinegar and milk to make 1 c.
10-12 pieces of chicken (1/4 breasts, drumsticks and thighs)
1-2 tsp. Mrs. Dash

Wash chicken and trim any fat and extra skin. In a shallow pieplate combine dry ingredients. Dip chicken in buttermilk, let excess drain. Dip chicken in dry mix to coat. Let dry on a rack or wax paper 15 minutes.
Meanwhile heat 2 inches of oil to 365 degrees in a deep 12 inch skillet over medium high heat. Add enough chicken to skillet to fit one layer. Reduce heat to medium. Fry chicken covered about 6 minutes for white meat, 8 for dark. Uncover, turn chicken with tongs, fry uncovered 6-8 minutes longer until brown

Spinach casserole recipes are available by the dozen on the internet. Buttermilk may be a little too sour for the casserole but will be wonderful in biscuits!

Cheesy Spinach Casserole
6 ounces uncooked spaghetti
1 egg
1/4 cup milk
1/2 cup sour cream
1 (10 ounce) package frozen chopped spinach, thawed
1/2 (14 ounce) can artichoke hearts, drained and chopped
1 (8 ounce) package shredded Monterey Jack cheese
4 tablespoons grated Parmesan cheese, divided
1 teaspoon dried minced onion
salt and pepper to taste
paprika to taste
Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water for 8 to 10 minutes, or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
In a 2 quart casserole dish, whisk together egg, milk, and sour cream. Using a wooden spoon, stir in spinach, artichoke hearts, Monterey Jack cheese, 2 tablespoons Parmesan cheese, and cooked spaghetti. Season with minced onion, salt, and pepper. Top with a sprinkling of paprika and remaining Parmesan cheese.
Cover, and bake in preheated oven for 15 minutes. Remove cover, and bake for another 15 minutes. Let stand 2 minutes before serving.
Spinach, Mushroom and Artichoke Casserole
*Very Good
2 tablespoons unsalted butter, plus 2 teaspoons
3/4 cup chopped yellow onions
1/2 teaspoon salt
1/2 teaspoon pepper
2 teaspoons minced garlic
1 pound button mushrooms, wiped clean and sliced
2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry
2 (14-ounce) cans artichoke hearts, drained and quartered
1 (15-ounce) container ricotta
1 cup grated monterey jack
1/2 cup crumbled feta
6 eggs
1/8 teaspoon nutmeg
1/4 cup dried bread crumbs
1/2 cup Parmesan
Preheat oven to 350 degrees F. Lightly grease a 9 by 13-inch glass baking dish with 2 teaspoons of the butter and set aside.
In a large skillet, melt the remaining butter over medium-high heat. Add the onions, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper, and cook, stirring, until soft, about 3 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the mushrooms and cook until they give up their liquid, about 5 minutes. Remove from the heat.
In a large bowl, combine the spinach, artichoke hearts, mushroom mixture, ricotta, jack, and feta, and toss to combine.
In a separate bowl, beat the eggs, nutmeg, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Add to the spinach mixture. Add the bread crumbs and mix well. Transfer to the prepared dish and top with a layer of Parmesan. Bake until the casserole is firm and the top is golden, about 45 to 50 minutes.
Remove from the oven and serve.

Make some buttermilk bread. Add it to the yeast when you make regular bread.

I don't like spinach though. I ued to steam it but never could rinse out all the sand first, so don't buy anymore!

In Europe before chlorine bleach sunlight and butter milk did the job

buttermilk can be used for lots of things you can place it in cakes instead of water or plain milk if you look on line I,m sure you could find some ideas.
