current set up is:

External store/plant room walls:- The external walls are 105mm brick outer skin, 75mm cavity with 100mm lightweight concrete block inner skin. Inner stores walls are 100mm brick

why is concrete used as the internal wall in this setup instead of brick? and why in the stores is brick used instead of concrete?

There are a couple of reasons. Firstly, the concrete inner leaf provides an insulation value greater than brick, however, if it were to be used for the outer skin, the block is not in itself waterproof and would therefore have to be rendered in cement mortar to provide a waterproof skin.As to why the inner walls are brick, that escapes me unless they have a load bearing requirement and even then, unless we are talking big loads, the block would have done the job. Perhaps the builder had bricks spare, as the inner leaf block would have been a building regs requirement.

Concrete has a better insulation value than brick but brick is more appealing which is why brick is used on the outer and still provide a good r-value to the inside with concrete.

the lightweight blocks are normal in this situation ...why they used bricks on the inside walls ..i don't know ..only the person who had it built can answer that

I know concrete is more water resistant that brick...or is it the other way around? Well, it's one or the other.

in a fight concrete will all ways win especially red concrete as it's a cycle path

cost and looks...brick in and out for looks and block in the middle cause its cheaper...
