Perhaps non-Catholic Christians can approach the altar and receive an ecumenical blessing or something while Catholics receive communion.

Yes, this can be done and IS done in most churches I have been to. I have seen many adults get in line and when they get to the priest, ask for a blessing and receive one.

Why would you want the blessing from the priesthood that you do not accept as valid? The option would seem to be reverence for other peoples systems of convictions, and the cultivation of a spiritual maturity that accepts that difference in religious practive is not offensive just because one's own spiritual convictions exclude one from fully participating.
