Is it ok to chop them up and put them in the freezer? Does anyone else have any other ways to preserve them? Will they loose their flavor?

You can buy pre-chopped frozen peppers in most grocery stores. I buy them all the tiem and it's not only cheaper than buying fresh peppers, but healthier.

Frozen vegetables are picked at their peak ripeness, thus having more nutrients.

Fresh ones are picked before their peak ripeness and may never reach full nutrient content. See the attached link.

Buy fewer peppers and buy them more often. Fresh fruits and vegetables are best when they're used the same day of purchase.

You can also dyhydrate them. Just chop them up in smaller pieces, and dyhydrate, store in an air tight container, and use to cook with. I have used dyhydrated peppers for years.

I seed them, chop them and freeze them. You'll need to cook them after they've been frozen because the consistency changes and they'll be soft, but they're fine in cooked dishes.
