and you've made me feel quite hungry now. I have to say, although there are probably thousands of cheeses in the world, I think that a nice piece of mature Cheddar on Cornish Wafers takes a lot of beating

Really depends on your mood. Kraft Cheddar spray cheese on Ritz is good if you feel like some hard-core industrial food.
Otherwise, I'd say a good extra-sharp Cheddar on plain Triscuts. Sharp taste AND texture. Yum!

I like triscuits and extra sharp cheddar cheese.....with nance's mustard on top!!! or port wine cheese with triscuits is really good too!!!
