Well the goat herders who wrote it did not know about the brain, they thought that the thinking went on in the heart. it was not until Galen of Pergamum (ca. 130-ca. 200) started to do medicine and dissections, that the anatomy was understood, well part understood, and we had to wait until the 1500's to get the work back from the Arabs, after the early church banned it.

The word "mochin" means mind in Hebrew and can be considered synonomous with brain. Jewish writings show that clearly they understood that thinking occurred in the brain.
Parts of the anatomy are used as sources of different emotions as an analogy and memory aid. They are not meant to be taken literally.
Another word that is sometimes used for brain is galgal, which means sphere. It is actually the skull. There are references in Jewish writings that the mochin is in the galgal.

Given that the Bible was never intended to be a Medical Textbook, is there any reason why it should mention every single organ and system in the human body?

As salaamu 'alaikym, my friend.
Insha'Allah, because the word "brain" is English and neither the Torah and other Hebrew text nor the canonical and accepted writings of the New Testament were written in that language.
When you learn Hebrew and/or biblical Greek, get back to me (i.e., if you don't really know the field of question, it might be wiser to stay out of the game!)
Ma'a salaam

The Bible also does not contain the terms 'stem cell' or 'cancer', wonder why that is...
...and why some people are so against that area of research on religious grounds when neither is mentioned in the Bible.

Mind is in the bible dozens and dozens of times.
Philip.2:5,9-12; Several places it speaks of the mind of the LORD God, and the mind of Christ, as take on the mind of Christ and that is a big order.

Same reason it doesn't mention lungs, I would think.
However, the word "think" appears 127 times. The word "thought" appears 136 times. The word "mind" appears 156 times (though some of those results may refer to things like "minding" oneself). "Thinking" appears 30 times. "Wisdom" appears a whopping 215 times. "Wise" appears 194 times.
All results are from the NIV.
Also, consider that Jesus commanded people to "Love the Lord your God with all your heart and with all your soul and with all your mind."

As you must know jesus came back form death, therefore he was a zombie, and zombies likes brains so after his wake they refrained of speaking about brains to prevent drawing the attention of zombie jesus.
