Well, you don't want all beef. It will be too heavy. I suggest another grain like Bulgar. If you want to stay away from grain, try mixing in sauteed mushrooms. You will need a ton of them as they reduce down to nothing after cooking but you definitely want to pre-cook the mushrooms or you will get beef soup inside of your peppers. Use a variety of mushrooms like cremini, button, shitake, and even mix in some dried morels or cepes.

You should have some sort of filler. We don't use rice, we use bread soaked in milk. We mix it into the ground beef along with herbs and seasonings, then stuff the peppers. We use a leaner ground beef so that the peppers aren't to greasy. Panko bread crumbs work great, also.

if you fill the peppers with a beef filling similar to meat loaf or a meatball recipe it really wont have the same texture or flavor but would be great. If you have a problem with rice in particular try replacing it with a differ ant grain like Bulgar wheat or barley.

I do my stuffed peppers just like I was making a meat loaf. Ground beef small chunks of bread, i don't use crumbs, chopped onion, herbs, spices and eggs. I top it with a little tomato sauce. The fun part is diving in with both hands to squish it all together.

go to ask.com i have found several recipes for stuffed peppers there(i love sturred peppers w/wo rice) the have several that call for creamcheese, meat, onion, mushroom.....got to go i think i'll go get a recipe and join you cooking some stuffed peppers

This sounds kind of gross but it was really good. Stuff the peppers with Chef Boy Ardee Beefaroni and then put shredded mozzerella on top. They were good.
