Unarmed defense is the defense of self or others while unarmed.(not possessing "any" type of weapon.)
Armed defense is the defense of self or others while in possession of and "using" a weapon in your defense.
What constitutes a weapon can vary from state but here are a few.
gun,knife,club,flail,hat pin,steel tipped boots,metal knuckles,bottle,a sharpened #2 pensil.
A common item,not normally considered a weapon,can be judged as one in court if the item is used as a weapon
an iron,a fire place poker,a chair,a sharpened #2 pencil.

Armed self defense:
Usually, both you and the attacker face a weapon, sometimes only you. Realisticacly, nobody's really going to walk around with a saurai sword or a Shuriken in their pocket, most likely a gun. But in such, you can use Shurikens, Three-sectional staffs, bo staffs, swords, and such. I don't think you really need lessons to use a gun.
I would most likely never use armed self defense because I beleive in the way of the open hand, which I'll describe in a minute. I would mostl likely use a fan, which is used to redirect movements and power, using the opponant's own force against him/her.
Kwai Chang said, "The tool names the man. A shovel for a digger. An axe for a woodsman. A gun is not a tool of piece."
Unarmed martial arts, or the way of the open hand, which literally translates to karate, doesn't have to be karate itself. It uses hand movements, how to defend yourself against both a street fight, formal fight, or a hostile situation or harassment. They include Karate, Kung Fu, Aikido, Judo, all of the very popular arts. I would reccomend these more because they often teach both unarmed and armed martial arts, giving you the variety to be able to defend yourself in a larger handful or hostile situations.

As stated above, Unarmed self defense means you defend yourself empty handed or just by using your hands and feet, Armed defense means you defend yourself with a weapon, whether it be a knife, a sword, spear or even a gun.
P.S. Unarmed could also mean you have no arms and have to defend yourself using other parts of your body : P

unarmed- one defending themselves with only their biological weapons (the body)
armed- one using a range melee or improvised weapon (shoe string, cell phone, stick, knife,gun) to assist in their defence
