I am trying to cook for my girlfriend's birthday

Both these dishes are wonderful look impersive and give a wow to any specail. Also just lightly steam fresh spinach and plate it around the cornish hens for added wowfactor like it would be at a fine restaurant.

Galic and rosemary cornish game hens
INGREDIENTS
2 Cornish game hens
salt and pepper to taste
1 lemon, quartered
2 sprigs fresh rosemary
2 tablespoons olive oil
10 cloves garlic
3Tablespoons white wine
3 Tablespoons low-sodium chicken broth
2 sprigs fresh rosemary, for garnish
Preheat oven to 450 degrees F (230 degrees C).
Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve

CORNISH GAME HENS WITH CHEESY RICE
STUFFING

1/4 c. (1/2 stick) butter
1/3 c. regular rice
2 tbsp. diced celery
2 tbsp. finely chopped onion
1 c. chicken broth
1 (2 oz.) can mushrooms, drained & chopped (opt.)
1 c. shredded cheddar cheese
2 (1 lb.) Cornish game hens
Salt & pepper
Melted butter

In a saucepan melt butter; add rice, celery and onion. Cook 5 to 10 minutes, stirring frequently. Add chicken broth and bring mixture to a boil. Cover and simmer on low heat about 20 minutes or liquid is absorbed and rice is fluffy. Stir in mushrooms; cool. Toss cheese lightly with cooled mixture. Season birds inside with salt and pepper. Stuff birds with rice mixture.
Place on rack, breast side up in shallow baking pan. Baste with butter. Loosely cover with foil. Roast in preheated 400 degree oven for 30 minutes. Remove foil; continue roasting for 45 minutes until done. Baste with butter occasionally during last 45 minutes. Additional stuffing may be placed in small baking dish, covered and baked during last 45 minutes of roasting. Then cover removed last 15 minutes.
also for a nice salad try getting some mix greens with slice thin pear or place rasberries crumblyed blue cheese in it. Try a nice light rasberry or strawberry vingerate to it.
For dessert try making mini lava cakes there are mixes out there in the baking needs section of the store. Also you could order something from a bakery too but remember all girls love chocolate. Maybe doa Chocolate fondue all you need to do is melt chocolate over w double boiler and add in some cream to help smooth it out place in a warm dip mini crock or fodue pot serve with fresh fruit and cubes of pound cake and see were it leads,
Also in the frozen food section there is precooked bread from Pepperidge Farm that you just place in the oven and bake to serve worm crusty bread with dinner she will go wild at all you have done. Good luck.

Spaghetti alla Carbonara Recipe

1 pound dry spaghetti
2 tablespoons extra-virgin olive oil
4 ounces pancetta or slab bacon, cubed or sliced into small strips
4 garlic cloves, finely chopped
2 large eggs
1 cup freshly grated Parmigiano-Reggiano, plus more for serving
Freshly ground black pepper
1 handful fresh flat-leaf parsley, chopped

Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished; it is very important that the pasta is hot when adding the egg mixture, so that the heat of the pasta cooks the raw eggs in the sauce.
Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes or until tender yet firm (as they say in Italian "al dente.") Drain the pasta well, reserving 1/2 cup of the starchy cooking water to use in the sauce if you wish.

Meanwhile, heat the olive oil in a deep skillet over medium flame. Add the pancetta and saute for about 3 minutes, until the bacon is crisp and the fat is rendered. Toss the garlic into the fat and saute for less than 1 minute to soften.

Add the hot, drained spaghetti to the pan and toss for 2 minutes to coat the strands in the bacon fat. Beat the eggs and Parmesan together in a mixing bowl, stirring well to prevent lumps. Remove the pan from the heat and pour the egg/cheese mixture into the pasta, whisking quickly until the eggs thicken, but do not scramble (this is done off the heat to ensure this does not happen.) Thin out the sauce with a bit of the reserved pasta water, until it reaches desired consistency. Season the carbonara with several turns of freshly ground black pepper and taste for salt. Mound the spaghetti carbonara into warm serving bowls and garnish with chopped parsley. Pass more cheese around the table.

Easy Chicken Parmigiana

4 boneless, skinless chicken breast halves
1/3 cup dry bread crumbs
1 egg, beaten
1 (12-ounce) jar marinara sauce
1/2 cup mozzarella cheese, shredded
1/4 cup freshly grated Parmesan cheese

1. Preheat oven to 350*F (175*C).
2. Flatten chicken breasts with kitchen mallet between to sheets of plastic. Dip chicken cutlets into egg beat, then bread crumbs. Place coated chicken in a lightly greased 9 x 13 x 2-inch baking dish and bake for 20 minutes.
3. Remove pan from oven and pour the marinara sauce over chicken. Sprinkle mozzarella and Parmesan cheeses on top and bake in oven for 15 minutes or until bubbly and cheese is melted and golden.

**** CHICKEN ON THE RANCH

Number of servings: 2 to 4

INGREDIENTS
1 tbs butter
2 to 4 chicken breast halves or thighs( thawed)
1/3 cup onions
1/3 cup of Ranch dressing or 2 level tsps, dry Ranch salad dressing
2 cups rice
4 cups hot water

INSTRUCTIONS
In a large frying pan, sauté onions until just tender . Add rice and
heat until rice starts to lighten. Add hot water, Ranch dressing and stir
until blended. Bring to a simmer and place chicken on top. Cover and let
simmer for 20 to 25 minutes. Turn off the heat, lift lid and place a
paper towel over the top, then replace the lid. Let stand for 5 minutes
more.

Pork Chop Casserole is easy and delicious.

Brown 2 to 4 pork chops on both sides; season with salt, pepper, paprika and caraway seed when you turn them. Transfer chops to casserole dish. Add one diced onion, about 8 ounces frozen peas and then pour one can (undiluted) tomato soup over all. Cover and place in 350 F oven for 30 - 45 minutes. Use peas/tomato sauce/gravy on mashed or baked potatoes. Serve with nice lettuce, spinach or waldorf salad and rolls.

Chicken pesto.
You need a food processor to process together garlic, walnuts, lots of basil, and olive oil. Then pour over chiken and bake. Or better yet, pour over already cooked chicken.

what does she like? that is a need to know. but usually a light salad with mescaline greens, feta, baby tomatoes, walnuts(chopped), with a sweet red wine reduction for dressing. a pan seared Salmon fillet with roasted red potatoes and bell pepper slaw, and a chocolate molten cake. served with red wine.

My cousin makes a mean salsa chicken....couple of chicken breasts, a jar of salsa...some white rice and viola! dinner! you can add your own variations of course.
