Same things you would use a chicken egg for. Its just much, much larger

A nice omelet for the whole family. A quiche cooked in a sheetcake pan.

You could probably beat it well to incorporate the yolk with the white and the section it off into portions and freeze it for later use. Just as long as you don't use it for whipping, you're OK.

anything all eggs have the same texture and flavor so you can do anything that you can do with a chicken egg with the ostrich egg
