Definitely how you cook it and the different thicknesses of the batter.

To add to your odd question, think about pasta. Variations on the pasta are Won Ton wrappers, Lumpia wrappers, egg rolls, spaghetti, lasagna, noodles - across a number of different countries but yet all very similar recipes. That pasta list also includes pancakes, crepes, waffles, funnel cakes - only basic difference is the sugar, and with or without eggs - with flour but different kinds of flour - rice flour, wheat flour, samolina flour, etc. Shows that even though cultures are different, there is a lot of similarities. Think about what the French do with their crepes - dessert and main course - versus what the Italians do with their noodles - with and without tomato sauce - and the chinese/oriental with theirs - deep fried with savory fillings or steamed - served with hot/spicy or sweet/sour sauces. Small world.

as quickly as I cause them to, i like pancakes with only the melted butter and Canadian maple syrup. I additionally like those large skinny crepes with the orange juice-zest-sugary sauce with the powdered sugar. yet this is whilst ordering them in a eating place that makes them. Any day with pancakes is a solid day...

First of all, only bad pancakes and waffles are made of the same stuff. They should have different batter composition. I like folding in whipped egg whites to my waffles to make them light and crispy. And they have oil in them. Pancakes should have butter instead of oil.
