Mayonnaise. Measure the same amount as the oil is called for. Just reduce the amount of eggs by one for your recipe if you like fudgy brownies.

I've made brownies with bananas (leaves a little banana flavor so don't do it if you don't like bananas,) yogurt, plum babyfood (this is how I most often do it,) any fruit that is mushy - pears are also good.

Prune puree will work, butter or margarine will work, blend up some fruit - preferably a light-flavored one like pears, bananas or apples and add that.
