Earlier I had a tiger roll with sage and onion flavoured roasted chicken and 3 cheese coleslaw. It sounds gross but it was really nice!!

Light and Easy Tofu Sandwich Filler
Ingredients (use vegan versions):
1/4 block firm or extra firm Tofu - frozen for chewier recipe
1 Tablespoon sweet relish
1 slice American style soy cheese, diced
salt and pepper to taste
Directions:
Press tofu well. I like to use firm, unfrozen tofu because the consistency reminds me of mayonnaise with out the calories. If you would like to use soy mayonnaise, then defrosted extra firm tofu works best.
Mash the tofu in a bowl and add remaining ingredients and mix well. This can be eaten in a pita, on toast or vegan bread, or directly out of the bowl...my favorite way!

I had a wonderful sandwich in a restaurant that had homemade sourdough bread, then one side was spread with mashed avocado - the other piece with cream cheese. Then shredded lettuce, thin sliced chicken, thin sliced tomatoes, alfalfa sprouts and a little sliced onion. It was a great sandwich. I could only eat half it was so big.

Either
Tuna mayo and sweetcorn
or
Boiled egg mashed with a little butter salt pepper and a bit of cheese!!
or
hot slice Cajun chicken with salad... yummy!!!

I love either roasted chicken or ham with lettuce, cherry tomatoes, spring onions, red pepper and coarsely ground black pepper...just lovely
