Taco Soup
2 pounds ground beef
1 large onion, chopped
1 can pinto beans and/or black beans
1 can whole kernel corn ,drained
1 can stewed tomatoes - mexican style
1 can Rotel tomatoes
1 pkg. taco seasoning mix
1 pkg. original hidden valley ranch dressing(dry)
2 1/2 cups water or more, to make soup broth
Brown ground beef and onions in a large pan, drain off fat. Add remaining ingredients and simmer for an hour or so. When ready, serve in big soup bowls, and have a skillet of hot cornbread to eat, too.

PUMPKIN MOUSSE
1 packet unflavored gelatin (2 1/2 tsp.)
1/4 c. dark rum
1 lb. can unsweetened pumpkin puree
1 c. sugar
2 egg yolks
1/4 tsp. nutmeg
1 1/2 tsp. vanilla extract
2 c. heavy cream
Pinch of ground cloves
1 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. salt
Sprinkle gelatin over rum in small heat-proof cup. Let soften while you combine pumpkin puree, sugar, egg yolks, nutmeg, allspice, cinnamon, cloves, vanilla, and salt in large bowl. Set cup of gelatin in pan of gently simmering water, stirring gelatin until dissolved. While gelatin is still hot, whisk into pumpkin mixture. Whip cream to soft peaks then carefully fold into pumpkin mixture. Chill mousse overnight. Sprinkle with chopped nuts before serving.

Well I guess I can tell you what I had for dinner:
Chopped chicken breasts with baby bella mushrooms, sauteed in soy sauce and dill.
Green beans
Kidney beans
It was so good. Something to consider when you want to eat healthy.
