HAMBURGER PIE

1 -1/2 lbs. hamburger
1 can cut green beans, drained
1 can beef gravy (or 1 can tomato soup)
1 onion, chopped
Salt and pepper to taste
1/2 can water
Mashed potatoes

In a large skillet, saute the onion. Add the hamburger and brown in a skillet. Season with salt and pepper. Stir well. Add green beans, beef gravy and water. Cook 4-5 minutes more. Pour into a casserole dish. Top with mashed potatoes. Bake at 350 F. for 20 minutes. Serve with a salad, and refrigerator biscuits. Serve gelatin for dessert.

Quick Hamburger and Macaroni Dinner

1 box elbow macaroni or Ziti
2 tbsp. vegetable oil
1 lb. ground beef
1 tsp. salt
1/4 tsp. pepper
1 small chopped onion
chopped celery
chopped green pepper
1 jar red spaghetti sauce

Cook macaroni according to the directions on the box. In a large skillet add oil. When oil is hot add the rest of the ingredients, except the sauce. Cook until meat is browned. Meat will break apart into smaller chunks.) Add sauce and cook for 5 minutes more on low heat. Toss with cooked macaroni.

Oven Pork Chops and Veggies

4-6 pork chops
olive oil
thyme
garlic
salt
freshly ground pepper
1 lemon, zested and juiced*
2-3 kinds of veggies (such as: potatoes, sweet potatoes, onions, zucchini, squash Roma tomatoes, parsnips, or pears)

Preheat oven to 425 F. Chop up your veggies into quarters and 2" chunks. Toss them in a bowl and coat lightly with olive oil. Add some thyme, garlic, salt and pepper. Rub thyme, lemon zest and salt and pepper on the chops. Squeeze lemon over the chops. Place the chops in a roasting pan or casserole on top of the veggies. Cook for 30 minutes or until the meat is tender.

*Lemon zest is simply the skin of the lemon. Peel the lemon and rub the peel over the chops. Do not use the white part as it is bitter.

Spaghetti - it is too easy, and so cheap.

Get a can of sauce $.99 house brand, noodles - $.89, a bag of salad around $2.50, a loaf of French bread - $2.

Heat the sauce, cook the noodles, slice the bread, open the bag salad into a bowl. Your done.

Don't forget salad dressing of some sort. And if you really want to get fancy, get a jar of olives and throw a bunch onto the bag salad.

A bottle of wine and a candle and you are set for the night.

I know of several very easy meals so lets start with two pasta recipes - they are vegetarian but very tasty.

60g butter or margarine
2tbs chopped parsley
450g mushrooms

salt

Sauce:

8oz/250g walnuts
1 garlic clove
½tsp fresh marjoram leaves
4floz/125ml olive oil
4floz/125ml double cream
handful of chopped fresh rocket

Method

1. Cook the pasta in plenty of boiling salted water for about 10 minutes.

2. Put the walnuts and garlic in a food processor and blend. Mix in the marjoram.

3. Put the walnut mixture in a saucepan and stir in the olive oil, cream and rocket. Mix thoroughly, then heat gently.

4. Drain the pasta, pour over the hot sauce and serve immediately.

Place half in the flan.
Drain the sweetcorn and arrange in the dish.

Hash Brown Potatoes

Degree of difficulty: Low
You need:
6 medium potatoes – coarsely grated
1 small onion – finely grated
1 tablespoon flour
1 egg – beaten
1 tablespoon olive oil
salt and pepper
optional – chopped parsley
olive oil frying

Method:
Put the potatoes and onion in a cloth and wring out the moisture. Lightly mix in the rest of the ingredients. Use a heavy bottomed frying pan for cooking the potato mix. When oil is hot put in tablespoons of mixture, pressing down a little for more contact with hot pan. These look better if a little lacy. When golden turn and cook the other side. Keep cooked ones in a warm oven.

Recipe for Tuna Mornay:
Ingredients
1 small onion chopped fine
2 tablespoons of butter or marg
2 tablespoons of plain flour
300ml milk
150g grated cheddar or tasty cheese

1 cup corn kernels (frozen or small can)
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice
pinch of paprika
salt and pepper to taste

Instructions:
Melt butter in a medium pan and fry the onion until tender.
Remove pan from heat and stir in the flour, then return to low heat for a few minutes.
Remove pan from heat again and gradually stir in the milk, then return to the heat and stir until it becomes a white sauce by boiling and thickening.
Add the cheese and stir until its melted.
Add drained and flaked tuna and corn, parsley, lemon juice and paprika. Stir until well combined and heated through. Season to taste.
This can be served as is with pasta, rice or veges. Or you can put it in a casserole dish with cheese and breadcrumbs on top and bake at 200 celcius for 5 minutes.
You can also replace the tuna with salmon and / or peas with corn.
