Dressing, Dumplings, Mashed Potatoes, Baked Potatoes, Rice and Noodles - choices for the carb.

Broccoli, Asparagus, peas and carrots, any kind of hot vegetable or casserole made with vegetables like broccoli and rice. Zucchini or other squash is also good with chicken.

A nice dinner salad is good with chicken - or put the chicken in the salad - make a salad base of lettuce, carrots, celery, and radishes, top it with diced apple, then cranraisins, then the chicken, then toasted pine nuts, walnuts or pecans and sunflower seeds, then top with Feta cheese and drizzle Raspberry Vinaigrette over all.

Couscous
Easy and fast! Takes only about 5 minutes if you use the pre-cooked kind. I make it with chicken broth and some of the drippings from the cooked chicken. Delicious!

To tell you the truth, chicken is one of the most versatile foods to cook with. (Spices, meat, sauces, etc.) Just make sure you get the right combination of foods. (Does it make sense to put bananas with it? Maybe...) Experiment with smaller portions, though.

Good Luck...

(Shrimp might even work with the right sauces/spices/etc. but Make sure it's not too much of one meat...and it depends on what shape the food is - deep fried - cold/hot - cubes - you get the idea)

I know this seems a little 'complicated' but chicken is the best meat to experiment with different flavors - happy cooking!
