BURNT BUTTER MACADAMIA &MARMALADE BISCUITS
100g {3.52 oz} unsalted butter at room temperature
50g {1.76oz} unsalted butter
75g {2.6oz} castor sugar
175g {6.2oz} plain flour
30 g {1oz} rice flour {or cornflour}
70g {2.4oz} chopped macadamia nuts
3 tablespoons marmalade {your fav}
3 tablespoons diced dried apricots{optinal}
method
melt 50g butter in small saucepan and continue to cook untill nut brown, set aside to coolslightly. Beat the remaining 100g of butter and castor sugar together in an electric mixer until creamy. Sieve the flour and rice flour together and add to the butter mixture, mixing well by hand. Stir in the nuts, apricots and marmalade, adding the cooled nut-brown butter. Stir well to combine, then divide the mixture in 2 and roll each half into a cylindrical shape on a lightly floured clean work surface. make sure there are no cracks then roll up tightly in plastic wrap and place on flat surface and refrigerate for a couple of hours or overnight untill ready to use.
Pre-heat the oven to 180c {356f}{453k} and line a couple of baking tray's with baking paper. Slice the biscuit dough into even rounds about 1 - 1.5 cm {0.39 - 0.59inch} thick and bake for 10 to 12 min depending on oven "less fan forced".Allow to cool before serving.

Oh this is so tough but i really like Mrs. Fields white chocolate macadaimean nut cookies are so amazing. Also, i love to make home made rice crispie treats and then i smoother them in peanutbutter. Its the most amazing thing in the whole world!

M&M cookies! It's just the Tollhouse recipe for chocolate chip cookies, but I don't add the chips. Instead I bake them halfway, take them out, add peanut M&M's, and finish baking. They're so good!
