Turkey wreath
Take one package of Pilsbury cresent rolls and place in a wreath shape with points going out from the wreath and opposite sides slightly overlapping. It should sort of look like a sunshine. Flatten so that it's not too thick.
Mix the following:
2 cups turkey, diced
1/4 cup mayo
1/2 cup shredded cheddar cheese
1/4 each red and green peppers
1 tbsp diced onion
salt and peper
Spread over cresent rolls in a circle, leaving tips bare. Take tips and cover turkey mixture, pinching to attach to inside of ring. Bake at 400 for about 15minutes. Check frequently.

TURKEY CASSEROLE
Left over Turkey
Broccoli
1 can cream of anything soup (mushroom, chicken, celery) - undiluted
3/4 c mayonnaise
1 - 2 c shredded cheddar or cojack cheese
1 tsp curry
black pepper to taste
bread crumbs
butter
Steam the broccoli lightly or boil lightly - not until done - just until the color changes to darker. Place a layer of the broccoli in the bottom of your casserole dish. Top it with a layer of your turkey, torn into bite-sized pieces (or cube it). Top that with a layer of the mixed well mixture of mayonnaise, condensed soup, curry and black pepper. Top that with a layer of cheese. Top that with the bread crumbs and place little dabs of butter all around the crumbs. Bake in 350º for 35-40 minutes or until bubbly. Can be made ahead of time, refrigerated, and heated later.
This next one doesn't have a name but is very very good.
Left over Turkey - pulled into bite-sized pieces
1 onion - cut in half and sliced
3 garlic cloves - minced
4 oz cream cheese
4 oz sour cream
2 tsp coriander
1/2 tsp white pepper (or black pepper)
1 green bell pepper - cut into slices
1 tsp chicken base (or 1 bouillon cube)
2 T butter
1 small can diced green chilies
1 small can sliced black olives (optl)
Saute onions and garlic in the butter until translucent. Add the bell peppers and saute for 2 minutes. Mix the chicken base into 1/2 c hot water and add to the pan. Add the cream cheese (cut into cubes) and stir to melt. Add the sour cream and stir to incorporate. Add more water to thin - you want it like a sauce - but not too thin. Add the diced green chilies and stir well. Add the turkey and stir well. May need to add a little more water here too. Add the olives and stir. Cook until everything is hot.
You can eat it straight for a low-carb meal or put it on cooked noodles or rice if your diet allows. You can even stir the cooked noodles into it.
TURKEY SALAD
2 - 3 c Cubed leftover turkey
10 grapes - or 5 green and 5 red - sliced in half
1 apple - cored and diced
1/3 c raisins or cranraisins
1/4 c diced white or yellow onions
Mayonnaise
2 tsp curry
Black or white pepper to taste
Chopped Pecans or walnuts
Mix together the mayonnaise, curry and pepper. Pour over the rest of the ingredients and mix well. Add more mayonnaise if not enough to coat. Add the nuts and mix well. Store leftovers in the refrigerator.
Open Faced turkey sandwich - 1 slice of toast, 2 slices of turkey or enough to cover the bread, either brown (leftover turkey gravy) or milk gravy (like what you would use for biscuits and gravy). Serve with a veggie and salad.

Use cream of chicken, cream of celery and /or cream of
mushroom soup and layer in a pan with cooked spegetti,
parmegan cheese . Called turkey tettrazzini. Yum. Can make
pot pie with soups and different canned drained veggies.
Can use chicken broth,noodles and corn for nice healthy
soup.

CURRIED TURKEY PIE

1/4 c. light raisins
Boiling water
1 1/2 c. herb seasoned stuffing mix
1/4 c. butter, melted
2 tbsp. water
1/2 c. milk
1 (10 3/4 oz.) can condensed cream of celery soup
1 1/2 c. cubed, cooked turkey or chicken
1 c. cooked or canned peas
1 (2 oz.) can chopped mushrooms, drained
1 tbsp. finely chopped onion
1-2 tsp. curry powder
In small bowl cover raisins with boiling water. Let stand 5 minutes; drain and set aside.
Combine herb seasoned stuffing mix, melted butter and the 2 tablespoons water. Reserving 1/3 cup of the mixture, press remaining stuffing mixture into a 9" pie plate to form a pie "shell".
Blend milk into soup; stir in turkey or chicken, peas, mushrooms, onion, curry powder and drained raisins. Turn mixture into stuffing lined pie plate.
Sprinkle reserved stuffing mixture over pie. Bake, uncovered at 375 degrees until pie is heated through, 30 to 35 minutes. Makes 6 servings.

My Father made this Turkey salad And it is good, You take all the left over Turkey and put in a blender to chop, Cut up celery, and blend it on chop, Blend it till smooth, Now it might look nasty, But then, Transfer that stuff into a big bowl, now add 2 cups of mayo, or Salad dressing, And stir it up, use a little black pepper, and put in Refrigeator covered, Makes a good lunch, He also does that with Ham also, left over ham , use the same thing, but instead of using celery, put in sweet pickles and mayo, and blend till smooth

Turkey and wild rice soup. Buy a couple boxes of uncle Ben's Wild and long grain rice, saute a few carrots, celery (chopped) and throw in the turkey and the rice with the flavorings they supply. Add water as you see fit.
You can adjust seasoning and spices if you like, I find that I like the flavors in the flavoring packets. Really simple, really healthy too.

TURKEY CROQUETTES:
6 tablespoons butter
1/2 cup flour
1 cup milk
1 cup chicken broth
2 teaspoons lemon juice
2 tablespoons snipped parsley
2 teaspoons grated onion
1/2 teaspoon celery salt
Dash each of pepper, paprika, and nutmeg
4 cups ground, cooked turkey
3/4 cup fine bread crumbs
1 beaten egg plus 2 tablespoons water PreparationIn a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.
In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly.
With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs. Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/water mixture and roll in bread crumbs. Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain. Serve with turkey gravy.

spread some ketchup on some toast, then place on pieces of turkey , then place under grill for a few mins, or mince with onion and potato to make burgers then fry, all simple and delicious.
