There are two basic kinds of lasagna: One is with meat sauce, the other is vegetarian. For a vegetarian lasagna I like to use not only lots of Marinara sauce but also one layer of seasoned Ricotta cheese, and on top a layer of sliced Mozzarella with a sprinkling of Parmesan cheese. At least one of the layers in between will then be vegetables. I like to use cooked spinach with mushroom slices, or you could use zuccini or even broccoli. Just make sure the veggies are cooked before you add them.

I make mine with a meat sauce and mozzarella cheese, you can use any cheese that you like (Parmesan,or Romano) any Italian cheeses. I have had lasagna with green peas in it, but why? once you start putting all kinds of veggies in it, it's not the real Lasagna, saves the vegetables for another meal, did the birthday girl like your lasagna? that's all that matters. You can serve a side salad.

The lasagna was fine. Just serve a vegetable side dish and don't mess with a good thing.

you can put veggies in lasagna, as some people do in pasta sauce--try carrots, zucchini or any tubular squash, of course fresh tomatoes, onions, fresh mushrooms, minced garlic cloves...of course you can load it with veggies and forget the meat, but don't forget the noodles, and lots of parmesan, ricotta, and mozzarella...try it, it really can be very good....

I made it once with sliced zucchini and didn't like it. What veggies did they want you to use. Some people use spinach which would be fine I think with the regular motz

nah. you can make it with spinach pretty easily, or you can steam some rice or cauliflower, mush it up, and mix it with the sauce.
