are there different kinds of threads for a CO2, N2O, He, etc tank? or can you fill any tank with any gas

different sizes,left hand and right handed threads,so people don't mix things up.

There are differences in some tanks.
You will find reverse threads on combustibles.
Others are interchangeable.

It is not advisable to use a tank for anything other than the intended gas due to tare strengths and such.

the threads aren't the determining factor.

Each tank is designed to hold a certain gas or certain type of gas. It is marked for that gas and has safety features necessary for that gas.

It would be extremely dangerous to put a gas into a container that isn't designed and marked for use with that gas.

They are different so no one uses the wrong gas.
