Egg Salad

12 eggs
3 tablespoon
3 tablespoons prepared Dijon-style mustard
1-1/2 teaspoons dried dill weed
1-1/2 teaspoons paprika
2 ribs celery
1 onion, minced
salt and pepper to taste

Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.

In a large bowl, chop the eggs into big chunks then lightly mash the eggs with a fork, leaving the majority of it somewhat chunky.

Add the mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mix well, adding more mayonnaise, if desired for your personal taste.

Serve on bread as a sandwich or over crisp lettuce as a salad. Salad will have a slight pink color, due to the paprika.

EggSalad Kicked Up a Notch
you will need: 4 eggs, a jar of mayo, 1-2 stalks of celery, 1-2 large carrots or a bad of mini carrots, whole wheat bread

1. boil all four eggs
2. dice the eggs and add to a bowl
3. to the bowl, add 2 spoonfuls of mayonaise or 3
4. add chopped carrots and celery
5. toast bread
6. make sandwich

1 large hard-boiled egg*, peeled and chopped
1-2 Tbsp mayonnaise (to taste)
1 Tbsp chopped green onion
2 Tbsp chopped celery
Curry powder
Salt
Pepper
1 leaf of lettuce
2 slices dark rye bread, toasted
* To make hard boiled eggs, place a few eggs in a saucepan, cover with water. Add a half teaspoon of vinegar and some salt to the water (if the shells crack while boiling, the vinegar will help keep the egg in the shell). Cover and bring the water to a boil. As soon as the water is boiling, remove from heat and let sit, covered, for 12 minutes. Drain water, add cold water to cool the eggs, let sit a couple minutes longer. (See How to make hard boiled eggs.)


1 Mash up the chopped egg a bit with a fork. Mix together the chopped hard-boiled egg, mayonnaise, onion and celery. Sprinkle with salt and pepper and curry powder. Mix.

2 If you haven't already, toast your bread slices. Put a layer of lettuce on one slice of toasted bread, spread the egg mixture on top of the lettuce, put another slice of toasted bread on top.

Makes one sandwich.

I usually boil 2 eggs per person who will be eating. Cut your boiled eggs up into a large bowl. Mix with mayonaise, salt, pepper, onions, pickles and whatever else you would like to put in it. (these ingredients are optional, except the eggs and mayo) Mix until egg pieces are coated and spread onto bread, enjoy.
You can also scramble eggs and make it the same way you just wont have the egg hunks you would get if you boiled the eggs. Good Luck and Enjoy!!!

Hard boil the eggs, cool and peel. I usually mash them with a fork and add enough mayonaise to thoroughly moisten. I also like to add chopped dill pickle, finely diced celery and maybe some minced fresh parsley. Be sure to season well with salt and pepper and if you like mustard you could always add a couple of teaspoons to the mix.

I use 6 hard boiled eggs, and put them through a ricer. It's much easier than chopping. Then I add 2 big Tbsp. of mayo, 1 big Tbsp. of Dijon, 1 normal spoon of dill relish, and a teensy splash of white vinegar. Sometimes I add some dried dill and pepper.

I make it the same way I make tuna salad! Except, I add more eggs, and leave out the finely chopped potato and tuna! Don't forget to add some fresh lemon juice for some zip!

Boil a egg and slice it.

Get two slice of brown/white bread of your choice or even a croissant.

For the croissant, cut in half, put a layer of washed lettuce, a few slices of cucumbers and the slices of egg. This is delicious!

For the sandwich, spread a layer of mayonaise on one side of the bread, add the egg slices, some lettuce then cucumber slices or tomatoes. You could also put this in the sandwich grill if you wish and make it crispy.

Chopped boiled eggs, diced onions, diced dill pickles, diced celery, salt, pepper, and mayonnaise. Sometimes I add bacon bits. If you don't have all those ingredients, simply chop up the eggs and mix with mayo.

hard boil some eggs, chop them up in a bowl add the eggs some mayo, a little mustard,salt pepper,paprika(optional) Mix all together! mmm !! some put relish in it too but thats up to whoevers making it!!
