I have Oberwiess Eggnog and skim milk. I also have vanilla soymilk. I have no vinegar or lemon juice.
I am trying to make waffles...

Just use the skim milk ... or use the soy milk, but cut down on the sugar in the recipe.

I think you need an acid to add to the milk. So if you have no vinegar or lemon juice you can't do it. But you can make waffles without buttermilk and they will be good. Just next time you are at the store pick some white vinegar up, it's cheap, a good all around item to have. I use it to clean.

You can use the regular milk instead of buttermilk, the buttermilk just adds a different flavor! eggnog would make your waffles very sweet and you would have to thin it out some with a whisk and milk! you could use vanilla soy milk! that would give it a vanilla flavor but I think that would be pretty good!

You probably can substitute with skim milk or soy milk

Ingredients:
2 egg yolks
2 cups milk
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup oil
2 stiffly beaten egg whites

Preheat waffle maker. Put all ingredients except egg whites in large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour 1/2 cup batter over grids. Close waffle maker, bake until steam no longer escapes, about 3-5 minutes. Repeat. Serve hot with your favorite topping.

Substitute undrained, plain yogurt or sour cream, whisked with a little milk to thin, in recipes that call for buttermilk.

Or combine a tablespoon of white vinegar or lemon juice with enough milk to make 1 cup. Set the latter mixture aside for five minutes before using.

Use regular whole milk or whatever kind of milk you have. If you have yoghurt you could mix a little of that in with it. The only thing you will be missing by not using buttermilk is the slight tartness in flavor.

change the recipe to add a teaspoon baking powder to the baking soda called for and use regular milk. The skim will work very well that way. or the soy milk will work the same.

If you are making waffles and have nothing to curdle the milk with, just try regular milk.

Well buttermilk is usually the alternative or substitute for yougurt so I suggest going with yougurt.
