Pam is not necessarily healthy... its a completely synthetic material. Nothing about it is real.. and that bothers me a little bit... It'll also ruin your cookware because it leaves a residue.

But, the way I figure.. we're all going to die of something. I still use pam, I still eat splenda, I still drink diet sodas... all of which are thought to at some point down the road cause cancer.

It's just how you feel about it.

Everything else.. absolutely! Extra virgin olive oil is about the best thing you can ingest.. its good for your skin, nails and hair, its good for your heart, it has necessary healty fats and it makes a killer pesto sauce :) Always go with the whole grain option also, if you can. It's just a more nutritious choice.

Butter is not shortening. That is a key detail in your question. If your concern is that your mom cannot have saturated fats and you are trying to make the cookies more healthy, substitute the butter with applesauce, not olive oil. The ratio is the same, so you'll need 3/4 cup applesauce. Olive oils have a distinct flavor and will alter your recipe to the point that it will not be edible. Even if your mom will love it no matter how it turns out, she will likely turn away cookies made with olive oil. If you are looking for chewy cookies, olive oil will also not acheive that because olive oil burns a lot quicker than other fats. Also, you usually don't want to make cookies with liquid fat because they flatten easier. Your cookies will be crisp, not chewy. If you want chewier cookies, the applesauce will help a lot.

Yes, anything that has these healthy things, in it is great to use. I say yes.
