Technically it does, but a meat thermometer is much more accurate. I always worry the pop up ones either pop up too soon or too late (i.e.: the meat is completely overcooked and dried out).

I've always found that when the popper pops up, the turkey is usually overdone, because the popper pops when the turkey has reached the proper temperature, BUT, it doesn't take into consideration that the turkey will continue to cook for a short time after being removed from the oven.

Disregard the little plastic pop-up timer that comes with your turkey. It's probably one of the worst inventions ever in my opinion. In my own experience, it has almost always popped out much too early, sometimes as much as an hour and a half before the turkey was supposed to be finished cooking.
Use a meat thermometer instead.

Many of the poppers are set for 180ºF. At that temp the breast is way overdone and the thigh meat is 'only' overdone!
Most gourmet chefs take the turkey out when the thigh meat is 161º - the meat will still cook out of the oven while it's resting to 165', the recommended temp.
Brining the bird gives you a moister and more flavorful bird and is more 'forgiving' as to temp!
