I am cooking stuffed peppers tonight, and am using a crockpot recipe but I'm cooking it in the oven. It calls for 6-8 hours on low, and 3-4 hours on high. What temperature and how long should I cook it in the oven?

No more than an hour in the oven at 350, or your peppers will turn mushy.

It depends of the stuffing but 1 to 1-1/2 hours should be plenty. I would cover them for most of the cooking time and make sure they have plenty of liquid all of the time. The one thing a crockpot does is retain moisture during a very long cooking process.

You could remove the foil or whatever cover you use during the last half hour of backing.

PJ got it right. Most of the Mediterrean world cooks this on the stovetop. Make sure to use paraboiled rice, but no need to cook it since it'll cook within the pepper.

Typically, you want to put a small bit of water at the bottom not to burn your peppers and give a little moisture. Bring this to a 'simmer' (whatever your stove calls for) and keep well covered. A tall pot with a proper fitting lid will be the key to this recipe for you. The pepper has a firm shape, so make sure to pack it well in the pot upright only. In addition to bell peppers, cubanelle and italian hot peppers make great stuffing peppers also.

I cook mine on top of the stove. I use tomato juice for the juice. It will thicken as they cook. I keep them turned to make for sure the pepper cooks through on all sides. Just pour the tomato juice over the top of the stuffed peppers until it is submerging the peppers. You can still see the top if they are sitting up in the large pan. I always cook them for about 1 hour on medium heat.

Try one hour at 350.

I have also parboiled the pepper halves so they don't take quite as long in the oven, but make sure you don't do that too long or they will be overcooked.
