put the cinnamon in the batter before to fry the pancakes. it's really good id you also add apple chunks to the batter. granny smith works best.

Yes, you can put it in the batter. I do.
And I warm canned apple pie filling, put it between the pancakes and on the top pancake, sprinkle cinnamon sugar on top of that, then line the edges with canned whipped cream. It looks pretty and tastes great.
