That dietary restriction was never given to the gentiles. They were only told to abstain from blood and sexual impurity as far as "rules" go.

I think it has do more with geographical locations. Jews and Muslims inhabit desert areas where pork goes bad quickly and bad pork is a killer.
In temperate areas like Europe, pork doesn't go bad so rapidly. The early Chruch probably saw it would have problems trying convert pork-eating germans and the like if they prohibited the eating of pork and other cloven foot animals.

Christians believe that Prophet Jesus(PBUH*) was sent to demolish the laws of Moses and that when Jesus(PBUH*) came to Earth that he was sent to establish new laws upon Earth for the Jews and made pig clean to eat which isn't true at all.
Jesus(PBUH*) came to uphold the laws of the Torah as well as the 10 commandments not get rid of them. God never said pig was ok to eat because of all the diseases that can be transferred to humans even if the meat is fully cooked because pig has no neck so the blood can't be drained out of the body therefore contaminating the meat and causing illness, and even death in humans.

Not all Christians (aka Protestants) view pork as the world's best food.
It seems that the European Pope wanted to distance himself from Judaism and part of his political-religious strategy for doing that was to say it's good for European Catholics to eat plenty of pork since the Jews killed Jesus Christ.
The European Pope attempted to wipe out Judaism with his Spanish Inquisition and many other anti-Judaism declarations over the centuries, part of his godless monopolization project against all non-profit religions except those based in Italy.

The pork we eat today (I can't say about centuries passed) is from an animal that is grain fed. This makes a huge difference in whether you should eat it.
A pig will eat anything, including poop. They do not have the digestive system to rid themselves of the toxic stuff in their food, so whatever they eat remains in their meat. This is why it's a bad idea to eat a wild hog.
Back in the day of the Exodus, when the rules were written, hogs were wild or allowed to eat the refuse of the people.

Those who practice "True Apostolic Christianity" don't!.....The Bible includes a report of a telling incident that shows whether Jesus viewed pigs as suitable for food.
Let's understand though, a part of Christ's character-that He apparently was never wasteful.
On two occasions during His ministry Jesus miraculously multiplied a few fish and loaves of bread to feed large crowds that followed Him-on one occasion 4,000 and on the other 5,000 strong (Matthew 14:15-21; 15:32-38). But, in spite of an abundance of food, Christ did not allow any of it to go to waste. "So when they [the crowds] were filled, He said to His disciples, 'Gather up the fragments that remain, so that nothing is lost'" (John 6:12).
The disciples gathered up 12 baskets of leftover food after the first of these miracles and seven after the second. He specifically told His disciples not to allow any of it to be thrown away.
With the understanding that Jesus was compassionate and not wasteful toward food, let's examine an incident involving Him and some unclean animals-a large herd of pigs.
Mark 5:1-13 records that Jesus crossed the Sea of Galilee by boat to the region of Gadara, a gentile (non-Jewish) area on the eastern shore.
There He was met by a demon-possessed man from whom He would momentarily cast many evil spirits.
In this remarkable encounter, the demons requested that Jesus send them into a herd of 2,000 swine feeding on a nearby hillside. Jesus granted their request, and, when the demons entered the swine, "the herd ran violently down the steep place into the sea, and drowned in the sea" (verse 13).
Many have puzzled over this astounding incident in which Jesus precipitated the destruction of a valuable herd of 2,000 pigs-enough to feed many thousands of people. Yet we should not be surprised when we understand the biblical instruction that these animals should never have been raised for food, and their owner was acting in defiance of God's laws.
Beyond question is that Jesus didn't consider the swine to be suitable for food. The compassionate Savior of mankind, the one who ordered scraps of bread and fish to be gathered up so none would go to waste, would never have wasted such a valuable resource had He considered the pigs to be an acceptable part of the human diet.
Jesus is "the same yesterday, today, and forever" (Hebrews 13:8). Animals He viewed as unfit for human consumption 2,000 years ago remain unfit for us to eat in our day.

It's not, according to God's Word, okay to eat swine. The subject of Acts Chapter 10 is people, not food. Learn to rightly divide the Word. The food laws are as valid today as when God gave them:
Matthew Chapter 5:17-18
17 Think not that I am come to destroy the law, or the prophets: I am not come to destroy, but to fulfil.
18 For verily I say unto you, Till heaven and earth pass, one jot or one tittle shall in no wise pass from the law, till all be fulfilled.
Luke Chapter 16:17 And it is easier for heaven and earth to pass, than one tittle of the law to fail.

Because eating pork in our dispensation is not prohibited by the Bible.
For every creature of God is good, and nothing to be refused, if it be received with thanksgiving:

It's down to personal choice.
I'm Catholic and I don't eat pork. It's disgustingly unhealthy, contains some volatile parasites and the methods of farming used to raise pigs is highly destructive to farmland and the environment.
So yeah, pork is repellent.
Edit: Would you really want to eat something that bathes in it's own filth? I for one, do not. But it's not all about that, as above, I'm more concerned about the ethicals side; the destruction pig farming causes and the health problems that accompany the consumption of pork...

Perhaps Christians know that Pork is problem free as long as you cook it properly. The primary meat of the Chinese people is Pork and there is 1.2 billion of them. The Chicken is actually the filthiest animal. The Chicken is the only animal that will eat its own feces. Surprisingly, no religion has a problem with Chicken.
