Talk with your cousin about what she would like you to sing. The music should fit her tastes, not ours.
I just did a wedding where the brides sister chose to sing an Avril Lavigne song. The bride only listens to country. Or another wedding where the singer chose a piece all about god guiding relationships for the couple but the groom was athiest. It was really out of place.
If the only thing wrong with the Shania song is that line just change the notes. I'm sure you've heard cover songs before....they never follow exactly and part of the challenge is to make the song your own.

I sung "When you say nothing at all" by Allison Krauss last summer at a wedding, and it was in the key of E flat. Or my friend is singing "Inside your Heaven" by Carrie Underwood. The CD I have for it has high, medium, and low ranges. Or you can go to Family Christian bookstore if you have one in your town. They have a contemporary wedding music section for various voices.
