I had some of my own as a midnight snack last night, and I feel fine.
I'd nuke it for a minute or two just to be certain.

Stuffing should be good for 7 days at the most in a well sealed container. The guidelines for a restaurant are smaller so as to make is questionable. 8 is a no-no.

The stuffing will be fine, as long as you have had it in the fridge the whole time.

sure. make a stuffed meatloaf with it....I saw rachel ray make this, and it looked great....in a loaf pan...layer meat. stuffing, and then meat on top, and bake as usual.She put tomato suace on the top and then yopped with shredded cheese before baking.
