I am trying to make healthy cookies without using butter. Can I substitute applesauce for butter in any cookie recipe?

I know you can substitute applesauce for butter in cake recipes. I have done that and it's not bad at all. But can you do that for cookies?

I would think you would have to have the butter for cookies. Applesauce works in cakes, but in my opinion, cookies need the butter.

I looked on the net and found this:

Fat plays a role in determining the shape and texture of a finished cookie — butter in cookies causes them to spread, producing crispness; cookies with vegetable shortening do not spread, and are more cake-like. You won’t be able to produce a crisp cookie with a fruit puree.

Finally, fat has a lot to do with carrying the flavor and nutrients in baking, so you should not do away with it entirely, or you’ll just lose a lot of the flavor.

I think you can, but did you try oil. If you get a good quality oil like sunflower, safflower, or soybean oil, you will get a better product than using applesauce. If for some reason you can't use oil, use applesauce. Do you try to reduce the sugar in cookies by using Splenda, or similar products? I sometimes use half sugar and half substitute and oil. It makes a great cookie! Good luck.

Try substituting Smart Balance spread for the butter. It helps balance your cholesterol. It also tastes and works just like real butter, without the unhealthy saturated fats, and no trans fats. I use it in place of butter or margarine all the time. I also sub applesauce for oil in cakes and brownies, but not cookies.

from what i hear
you can use applesauce
to subsitute for the amount
of oil that you plan to use.

We need fat in our diet. Fat-free diets actually make you fat. Use butter-- the real stuff, too. Butter esters are a nutrient not available elsewhere. So, use butter, but keep the cookie eating (because of the sugar!) to a minimum.
