wesson is like vegetable oil, no flavor...if you replace with olive oil, then you'll have the flavor of olive oil on whatever you're baking...it will be weird if what you're baking is sweet... but ok for savory stuff...

i wouldn't recommend it. it will absolutely alter the flavor of whatever you're baking. olive oil has a very prominent flavor. i would only use it in something savory, not sweet
