Most people fear what they don't know or understand. She might think she knows, but if she gets her information from non-Mormons, there's a very good chance that she knows less than nothing. You should be extremely careful when trying to learn about Mormons from others. There are many who hate the Mormons and spread lies, distortions, and conspiracy theories about them. Others think they understand Mormon doctrine because of "what they've heard," but are actually misinformed. Perhaps your M.I.L. simply doesn't understand Mormon doctrine? Many efforts have been made to disseminate false information about the Mormons; perhaps it's not your M.I.L.'s fault that he's been misinformed.

Mormons have some rituals and practices that people outside of the faith might consider odd, even cult-like (i.e. sacred undergarments, certain church ceremonies are only open to other Mormons and more). That's no reason for your MIL to freak, but maybe an explanation.
