Either the Nikon D40 or D40x. Both are great cameras at a great price. If your ok with only 6 megapixels go with the D40 and buy a Nikkor 55-200mm VR lens. Its a great addition for only $200. Here are some links so you can take a better look. Good Luck!

Check out the Pentax DSLR line. K100D, K100D Super and the K10D. All 3 have Image Stabilization (IS) in the camera body and will accept every K-mount lens ever made. You'll have to use manual focus with the older lenses but at least they can benefit from the IS technology.
The 100 series are both 6.1mp; the Super has dust removal to keep your sensor clean. The 10 is 10mp and has dust removal. Either of the 100 series should be dropping in price since the 10 was introduced.
Avoid any offerings for the K110D - it does not have IS and is probably discontinued.
I like to give people an alternative to the "Canon-Nikon" mantra.

You may consider Canon XTi (400D) too. It is selling for about $670.
