I love this recipe for 2. Scallops are impressive because it's not something people eat everyday. Get them when they are big, fat, and fresh! Makes you look like a gourmet cook, even though it's incredibly simple. And it smells great, not too fishy or greasy. The lemon really makes for a nice aroma. No garlic involved, so no worry of bad garlic breath afterwards if you want to get romantic. And it's light enough that your date will not feel 'stuffed'. Serve them over wilted water cress or spinich prepared with a lite olive oil. Add a brown and white rice mix on the side. And a bowl of citrus sorbet for dessert. FYI - Champagne will start the evening off right with this romantic meal.

Scallops with Lemon and Caper Sauce

Serves 2

3/4 pounds medium sea scallops
Salt and pepper, to taste
4 tablespoons unsalted butter
Juice of 1/2 fresh lemon
1/2 tablespoon capers

1. Pat scallops dry with paper towels and sprinkle them with salt and pepper.

2. In a medium skillet, melt 1 tablespoon of the butter over high heat. As soon as the butter starts to brown, add the scallops to the pan and sear for 2 minutes on each side or until they form a rich golden brown crust and are just cooked through. Remove the scallops from the pan and arrange them on 2 warm plates.

3. Remove the skillet from the heat. Cut the remaining butter into small pieces. Add the lemon juice to the skillet, scraping the bottom of the pan with a whisk.

4. Return the pan to medium heat. Whisk in the remaining butter a few pieces at a time. Stir in the capers. Pour sauce over scallops.

Beef Wellington is elegant, impressive, not too difficult and is sure to be a hit. For something even easier but still very nice try Chateaubriand. Both are quite "romantic" due to the fact you are sharing one entree between the two of you.

Chicken Parmigiana Recipe courtesy Tyler Florence 4 skinless, boneless, chicken breasts (about 1 1/2 pounds) 1/2 cup all-purpose flour Kosher salt and freshly ground black pepper 2 large eggs, lightly beaten 1 tablespoon water 1 cup dried plain bread crumbs 1 cup freshly grated Parmesan, plus extra for sprinkling 1/2 cup chopped flat-leaf parsley leaves 2 teaspoons garlic powder 2 cups marinara sauce 1 (8-ounce) ball fresh mozzarella, thinly sliced 1 pound spaghetti pasta, cooked al dente fresh basil Preheat the oven to 350 degrees F. Get the ingredients together for the chicken so you have a little assembly line. Put the flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, combine the eggs and water, beat until frothy. Put the bread crumbs on a plate, add the 1 cup parmesan, chopped parsley, and garlic powder. Season with salt and pepper and stir with a fork until thoroughly combined. Heat 3 tablespoons of olive oil over medium-high flame in a large oven-proof skillet. Lightly dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off, then dredge in the bread crumbs. When the oil is nice and hot, add the cutlets and fry for 4 minutes on each side until golden and crusty, turning once. Ladle the marinara sauce over the chicken and arrange the mozzarella on top. Sprinkle with Parmesan, and some fresh basil. Bake for 15 minutes or until the cheese is bubbly. Serve hot with spaghetti.

I love to make Filet Mignon for my boyfriend. You can usually find prepackaged cuts in the fresh meat section of your local supermarket for less than 10 dollars. You can make them on the grill on pan fry them. Salt and pepper them and then baste them frequently while cooking with a mixture of steak sauce, liquid smoke and a teaspoon of water. Turn only once. 8-9 minutes per side will give you medium. Hope you like it!!

I don't know when you are having this meal, I am usually a day short on everything. But have you ever noticed on the menu in better restaurants the one meal that is only prepared for two?
Rack of Lamb. Candles, a nice bottle of wine.

the way to have a romantic dinner is from the company and the ambiance/ atmosphere. dim lights, candlelite, soft, jazzy music, sm. bqt. of roses. eating is not romantic... it can be sensual. it's what YOU make it to be.
2 good hints/ clues...
no garlic and onions
nothing real messy like sauce/ spaghetti
you can have pizza and w/ all the nice atmosphere it can be romantic
have fun!!!!!

I made this recipe and it is AWESOME and my boyfriend LOVED it!

I recommend making the glaze up while the chicken is in the oven for the first time because I feel that it will cut down on your cooking time!

Good luck!

Italian Chicken or lasagna cassarole...both are exceptionally easy to put together ahead of time, bake in about an hour.
