I want the chicken to be more tender I think, It is real good but seems a bit tough... any ideas?

Do you use a meat mallet to make the chicken uniform in thickness (and thinner)? It can get tough if you simmer it too long. After it's been pounded out and browned, it really doesn't take very long for it to cook through while you're making the marsala sauce.

I agree with Dottie R. Take the chicken and place it on a cutting board skin side up.

Take a large piece of plastic wrap and fold it several times unitl it is just a bit bigger than the piece of chicken. Put it on the chicken and gently pound with the mallet. Make it as thin as you can (the plastic wrap will help prevent the chicken from getting holes pounded through it).

The secret to tender chicken is to cook it as quickly as possible. Brown on both sides and it should be good to go.

I would marinate the chicken longer and coat it in flour before coooking it. Plus, don't make the chicken too think...1/4 inch is thick enough.

Make sure the chicken is thin enough so it doesn't have to cook long. Also, make sure it hasn't been previously frozen. That affects the texture, too.

when you cook your chicken...just cook til barely done and remove...then make your sauce and replace the chicken till heated thru...lots of people over cook there chicken in the sauce......but yes you should pound your chicken out to thin!
