I am a former chef and love lavander honey, along with the greek one that the bee's pollenate rosemary flowers, here in Canada we have some from Quebec were the blueberry flowers were done, and then there is the US Orange Blossom one to. The name on e the jar means loosley translated as the "Hive of Bee's".

It is a bit more flavourful than plain honey and a bit milder than buckwheat, I like to use it over plain yougart, on fresh berries, as a tangy addition to a glaze for both ham and roast leg of lamb and I mix it into the herbs de provence when seasoning lamb chops or roasts.

It also makes a special ice cream made with lavander blossoms infused in the milk that much more special, I had it Nice, France once.

I haven't tried it, but authentic what? Like authentic honey, authentic lavender honey, what?
