Extra cloths, socks, hygiene gear, rain gear, maybe extra boots, ammo, MREs (food, kind-of ha-ha), and all the things needed in battle. I can't locate my packing list for what gear is carried normally, but I know it varies by mission and environment. Basically, everything that can be needed on a battlefield or something that can act in more ways than one (like socks for insulating your neck, etc.).
Basically, if you want it to be realistic of modern times, get stuff that the branch of service your are acting as would carry into battle. Air Force? Tooth brush. Navy? 20 lb pack. Army? 30-40 lb pack. Marine Corps? 60+ lb pack. That was a little joke, by the way, but seriously just carry the things you need for however long you will be out plus 3 days, or so.
EDIT: Like the other poster said, a lot of water. Don't forget to hump like 3-5 liters of water (depending on temperature), per man, for each day you are supposed to be out.

to include the sleeping pad.Damn been so long I can't think of anything else, of course Everyone had some personal things.
I always had a bottle of witch hazel, a bottle of hydrogen peroxide, and a bottle of rubbing alcohol.
And most important of all a bottle of Louisiana Hot sauce.
also my personal favorite. a carton of cigs. and maybe a log of skoal. also maybe a monster. e-tool (got to have a toilet seat) and maybe, just maybe a little moleskin.

Wet Weather gear, poncho, and if in a cold envirnonment, Gortex top and bottom, MRE's, hygiene items, spare uniform, several sets of socks (and optional extra underwear), E-Tool clipped to the side.
If you are going out overnight you will probably also have a bedroll and sleeping bag, but only if it is an overnight deal.

ammo, water, cami netting, ammo, water, feild stripped mres, ammo, a couple of two by fours, weapons cleaning gear, more ammo, more water, maybe a sock or two but i wouldnt bother, e-tool, a bible if your religiously inclined, and last but not least; a bag of beef jerky...
who needs all that other crap. its airsoft remember...
