It is an old tradition that came about because it was thought that when you sneezed it caused your soul to be put out of your body and satin could get it. So, people said God Bless you to send back your soul. Peace

I wasn't aware that anyone said "Good bless you." I thought it was "God Bless You" and it stems from the old superstition that if one sneezed, their soul was in danger of being snatched from the devil. Saying "god bless you" was a way of protecting the person's soul.
