Farm raised duck is very good, has a lot of fat and can be greasy but the flavor is much like dark meat of turkey. Stronger than chicken. Wild duck can be a little gamy tasting depending on what it has been feeding on. Smoked duck is really good. I like smoked duck sanwiches with a little mustard. It is something like ham.

duck is horrible and tough and stringy 1) if you dont cook it right 2) if you dont cut it right 3) if you dont get it fresh 4) if you dont like duck.. a 7 cheese plater with a selection of olives, cold cuts, marinated grilled veg. and a delicious duck confit adds to it.

Duck is very good. It is similar in texture to chicken but has a moister flavor to it.
