If it has a 2 barrel carb the 318 has a small one and the 360 has a larger carb like the 383 or 400.If it is a 4 barrel motor you can look down on the block by the starter and the id numbers will be there.

Proper method: look under the hood at the label if its still there, if not, run the vin #, or run the # stamped on the side of the engine block. Fun method: put a full can of soda on the dashboard and punch it, 0-60. If it's a 318, the can *might* fall off the dash onto the front floorboard. If it's a 360, the can will end up somewhere in the backseat. I learned that from Joe Dirt.

The quickest way is to look at the carburetor and exhaust manifolds. Al tho they will interchange, the 318 comes with a small carter carburetor. the 360 comes with a slightly larger Holly. The 318 comes with a round, smooth exhaust manifold and the 360 with larger sorta square manifolds with ribs running down the sides. Also the Vin no. will tell. Any parts store will help you with the Vin no.

Since a lot of things could have changed on the engine in 30 years, the best way to tell is look on the side of the block right above starter. There will be a part number and the engine size cast into the block.

You should have a diagram on the underside of the hood. It's commonly called a "vacuum diagram", but has other info on it, such as engine displacement (in Cubic Inches or Liters).
Also on it is usually the spark plug number and the gap they require.
It is possible that this sticker is on the radiator support instead.
A more interesting way...I doubt you could get a decent burnout with a 318, but the 360 could!
