Some cold cuts are healthy like cold turkey or lean deli roast beef. Just add a veggie like tomato, cucumbers or lettuce and some whole wheat bread and you've got a healthy lunch/dinner without using your micro or oven. I would stay away from the bologna type cold cuts. Lord knows what they put in there!
As for healthy meals the Birds eye company makes pretty darn good veggies that are in the bag ready to cook. You can just nuke them for 5 minutes and you've got your veggies.
If you have a Trader Joe's near you they have individually packages of brown rice you can microwave too. They have a nice selection of single serving size healthy microwaveable meals too.
Shrimp, fish or scallops are easily prepared in a countertop oven. Just take a square of foil spread 2 tsp olive oil on it, place your choice of seafood on it that add a little garlic salt, pepper and a good squeeze of lemon juice on top. Fold the square foil around it to form an envelope and seal the sides. Bake at 350 for about 10-12 minutes and you have a great healthy meal. You can also do the same recipe using chicken breast except increase the time about a minute or two.
Better yet go find yourself a nice girl that can cook!

buy those new ziplock steamer bags to use in the microwave. They are awesome! They also come with a bunch of recipes. You can steam chicken breasts with veggies, fish with veggies, etc. All very good for you! You could also use some of the healthy frozen, prepared microwave dishes (I'm assuming that's what Encor is), but I would only use them once or twice a week because of all the sodium and preservatives they contain.

When you say countertop oven - do you mean the freestanding burners? You could buy an electric fry pan, and/or a slow cooker to increase your options.. but if you just have the freestanding burners you could:
steam veggies - it's the best way to cook and PRESERVE nutrients.
make stir-fries (chicken, rice veggies), soups - I cook on the top of the stove for most things!
Cold cuts - Personally, I am cutting back on all processed foods - processed meats contain nitrates etc.. it is BETTER to stick to the real thing, I think..

How about a chicken packet with veggies. Use boneless skinless chx breast, season with your favorite all purpose seasoning, place in heavy duty foil, put some of your favorite veggies (broccoli, cauliflower, squash, peppers, onions) on top, sprinkle with olive oil fold up packet and cook in your counter top oven for about 45 min. You can buy box rice mixes that are microwavable and voila, you have a full healthy meal in under an hour. This same method is interchangeable with pork, or beef. A small pork tenderloin can also be cooked in a counter top oven. Rub with crushed garlic, salt and lots of pepper. While this is cooking wash and cut in half some red baby potato's put in micro-safe casserole with a little water and salt cover and cook till potato's are tender. Drain and dress with olive oil and lemon juice. I cooked for years with just a burner, microwave, and toaster oven so I know how this works.

You can steam vegetables in a microwave. If you have to eat prepared microwaved foods, I'd at least go with the Healthy Choice/Lean Cuisine type ones. Turkey cold cuts can be lean. I'd suggest using whole wheat bread and lots of fresh vegetables.

This is a good meal if you like tuna. We call them Tuna Charlies. Mix your tuna with mayo or salad dressing whichever you prefer then add some chopped water chestnuts (get the really cheap ones they all taste the same)
and put it on a toasted english muffin and top with medium cheddar cheese then put it back in your toaster oven to melt the cheese. Optional ingredients would be a little lemon juice and/or poppy seeds to make it a little tastier. Serve with salad.

What do you mean by a countertop oven? Do you mean a toaster oven? If so, you might consider getting a hot plate so you will have more cooking options. Then you will be able to cook anything.

I'm not a lady, but it's easy bro...
eggs (limit to 2-3 yolks, but can pile on the whites), omelets, chunky soup, grilled cheese, pasta, peanut butter sandwiches, deli sandwiches, and some frozen meals are perfectly fine, and milk/cheese.. keep your meals balanced (fats, proteins, carbs) and work out..
man.. i don't even know-- there are countless options
