We had a ton of mashed potatoes leftover so we made some potatoe cakes and sheppards pie.

Heh, our stuffing is usually gone! But I've also done a stuffed mushroom with it. You can even butterfly shrimp and pack stuffing in it and bake. As for the masheds, I've made potato pancakes, shepards pie, or even potato bread and rolls, or mashed potato and leek soup.

Make potato puffs! Preheat oven to 400F. Use 1 heaping tablespoon of potatoes and form it around a 1/2 inch cube of velveeta, roll in melted butter, place on greased cookie sheet and sprinkle with kosher salt (I also sprinkle with cayenne pepper) bake at 400 10-15 minutes or until golden. CAREFUL! The cheese is VERY hot!

I just made a yummy casserole using all Thanksgiving left overs
layer in casserole dish
stuffing
gravy poured over top
veggies of any kind
layer of turkey
then a layer of mashed potatoes
bake at 350 for about an hour

wrap the mashed potatoes around any meat like meatball, tunaflakes, chicken bits, to make a patty (like a stuffed potato burger) and voila...you have croquettes! You can use garlic mayonnaise or sweet chili sauce as dip.

mashed potatoes make a wonderful filler for them little cracks or holes in your walls. like when you remove nails once used for hanging pictures. another thing you can do with mashed potatoes and stuffing too is put them in the fridg and eat them later. i know this is an outlandish thought, but give it a try.

I fry up mashed potato patties mixed with scallions and parm cheese in a bit of oil. Serve with sour cream.

with left over stuffing I just eat it but With left over potato I either make soup of make potato patties with it.
Take your mash potato and cut up green onion in it, one egg (depends on how much left over there is)and about a tbls of sour cream. make into patties and dip into bread crumbs. Fry in a buttered pan until firm, and enjoy.

fry up some onion and bacon until cooked. then mix in mash potato and warm through. serve with grated cheese on top.
