Native Americans watched wildlife feasting on oysters (probablly mostly sea birds). It wasn't hard to figure out that they were good to eat.

Hungry enough to watch the animals in the area to see what they were eating. How do you think people came up with eating roots like carrots and potatoes, or drinking milk. Or even eating honey.
