Kendo stick? Do you mean a Bokken? It is a wooden sword.

Shinai is a practice sword for Kendo, so is a Bokken.

Shinai is for early stages of Kendo training, Bokken, which is solid wood, is for more advanced practitioners.

Also, the Bokken is an actual weapon.

No difference. It's just that wrestling doesn't want to confuse it's audience with difficult foreign words like shinai. I'm sure nunchuk made it into English just because "two sticks attached by a chain used in karate" would be awkward. Bo staff is just redundant, as bo is Japanese for staff.
