For any congac the better the quaility the higher the price. The finer the cognac the finer the blend.

You could compare it to a car for the people that are not congac conasuers. The comparison of cheap congac and fine quaility congac is just like a rust bucket car vs a ferarri, you pay the high price for the high quaility.

The most expensive bottle of cognac was $1500 Australian. It was like liqued heaven.

VS, VSOP and XO/Napolean indicates years in a barrel in the region of Cognac France. Your paying for it's rent, it's location and rep and a long distilling process.
Very Superior = at least 2 years in a barrel
Very Superior Old Pale = at least 4 years
XO and Napolean rating = 6 or more years in a barrel. Tannin from the wood barrels give depth and color, the darker cognacs are well aged. This web site provides some interesting facts - http://www.american.edu/TED/cognac.htm

Because people are willing to pay for it. I'm not willing to spend that much on cognac, but I have spent $50 on an 11.2 ounce beer.
