It would help to know what your mom likes to eat.

Here is one of my easy favorites:
1) Put a pot of water on the stove to cook pasta
2) Take either thin sliced chicken breast ,pork, or veal
3) spice the meat with pepper, salt and Worcester sauce
4) take some flour and cover the meat evenly with flour
5) take a medium bowl crack open 2-3 eggs mix well, ad Parmesan cheese about 1/3 cup
6) put the meat slices in one by one and bake in a frying pan win some canola oil
7) set aside
8) heat up your favored ready tomato sauce
9) the pasta should be done by now drain

Present on a large platter pasta on the bottom, meat in a neat line in the middle with a thin layer of tomato sauce. Sprinkle with a little Parmesan cheese and garnish with some green herbs. Serve with a Nice mixed salad and a glass of red wine.

This is a simple dish. The egg, Parmesan mixture keeps the meat real nice tender and moist.

Lasagne. Betty Crocker has a great recipe. It's easy to adjust, too. (You can skip the meat, add spinach, add extra veggies, whatever.)

Grab a bagged salad and a bottle of Italian dressing, some sparkling cider, and some garlic bread. Easy, AND you'll have awesome leftovers.

does she like Asian food?
wanna try lemon grass beef?
you need NY steak, fish sauce, sugar, chopped garlic (1TB spoon), grounded lemon grass (1 TB spoon), put on the hot frying pan with little oil.
serve them on top of lettuce, good luck

note:*u can find all the ingredient at Asian market
*sugar and fish sauce must in the same amount. example 1 sugar : 1 fish sauce (you probably need 3 spoon of each for 1lbs of steak)

CORNED BEEF AND CABBAGE..

IT'S A CINCH. IT COMES WITH THE SEASONING. JUST PUT IT ON THE STOVE, COVER IN WATER, AND COOK. IT WILL TELL YOU ON THE PACKAGE HOW LONG.

THROW IN SOME CABBAGE, MAYBE SOME ONION, AND CARROTS. IT'S DONE. THE MEAT IS TENDER, AND TASTES DELICIOUS.

OR STUFFED BELL PEPPERS..
