TURKEY INJECTION

1/2 c. water
1/2 c. lemon juice
8-12 drops Tabasco
2 tbsp. garlic juice and salt to taste or 1 1/2 tbsp. garlic salt

This is mixed until salt dissolves and injected with a marinade needle into bird before cooking. Adds great flavor and moistness to bird.

Orange juice??

Well, you can brine a turkey in a solution of salt and water, and spices, but it takes a lot of room. Generally if you rub it with kosher salt and black pepper, have it near room temperature when you put it in the oven and don't overcook it, you can do just fine.

I used to rub mine with walnut oil, which seems to be a great match with a turkey, and put some poultry herbs in it (parsley, sage, rosemary, thyme - just like the song). Sometimes butter on the top or just under the skin.

Sure you can inject it, but if you overcook it, that kills any benefit. For $14 buy an instant read thermometer, cook it until it reads 160, take it out, let it sit for 20 mins or so, rise in temp, let the juices redistribute, and you'll have a fine bird.

Note: don't leave the instant-read in. It'll melt. Forget the pop-up things - Butterball and whoever puts them in, but they're set really high so there can't be any legal liability because the bird will be overcooked. Get an instant read from your supermarket and learn to use it and understand that if you take a steak or poultry out about 5 degrees early it will continue to rise in temp, juices will redistribute, and you'll have a perfect bird.

In case you haven't noticed, Thanksgiving has passed! However, I like to put a good strong flavoured stuffing in the turkey which leaves a great flavour all round. I do just like the song says, 'parsley, sage, rosemary & thyme' , with the emphasis on the sage. That's what gives a turkey it's flavour. Stuff some of the stuffing under the skin covering the breast, & the rest in the cavity.WE in Australia have our turkey at Christmas, so I am waiting patiently for that day.

I've never injected a turkey, or any kind of bird for that matter. I just rub it with olive oil, sprinkle on some seasoned salt (Lawry's, Johnny's, etc), put on a bit of fresh rosemary and fresh thyme (chopped and rubbed), then throw a quartered onion and some mashed garlic into the body cavity.

You could try slipping some bits of garlic or rosemary needles under the skin. Just be careful, because you can dry it out if you have holes all over the skin.

I simmer some pot in butter and then inject the 'pot butter' into the turkey before roasting.

It tastes weird, but nobody seems to care.
