You employed the word letters in your question. The Chinese language does not have any "letters": it is refered to as an "ideographic" language; it other words it is composed of "characters" as such, not letters. You will find letters only in languages that are alphabet based. Chinese has 1,000's of characters in it, and is an absolute nightmare for most westerners to try and learn.

I may be mistaken, but the language with the largest number of letters is, surprise, surprise, "Sanskrit". Check it out on the Internet.

Mkhedruli (Georgian alphabet) has 33 letters in common use.

The letters of mkhedruli are in close (but not perfect) correspondence to the sounds of the Georgian language.
