There are prepared mixes or pellets you can get @ the pet store that are good for mice & rats, but you don't need to do this. We give our little guys mixed whole grains (unsweetened cereals, oatmeal, bits of whole grain toast, cooked rice & other grains) mixed with a bit of vegetarian dog food. They get a bit of fresh veggies nearly every day (peeled unless it's something organic), a little fruit a couple times a week & occasional sunflower seeds & sometimes a nut in the shell (which is a great plaything--chew treat as well as a snack). We also give them vegetarian dog biscuits, which they love, & a taste of whatever we're having unless it's unhealthy for them.
Please don't listen to ppl who suggest cheese, although it's often used in traps dairy is not good for rodents.

You need to feed him/her a seed mix of some kind. Keep the protein under 13% to avoid severe hot spots.

I recommend Nutriphase rat and mouse OR hamster
or
Sunseed Sunscription HAMSTER mix. (the mouse mix has too high of protein)
